Sooo, have I mentioned that I’m sick? As I’m typing this, I have to pause every twelve seconds for a violent coughing fit in which I nearly hack up a lung. There has also been a muffled ringing in my ear since I woke up an hour before my alarm this morning, which has made conversations very strange today. So. Much. Fun. It appears things are not quite turning around for me yet.
Being sick is absolutely never fun, but it is even worse to be sick during the summer. The weather is lovely, sunny, and warm. There are still so many things left to do before the cold creeps in, so taking advantage of every second of daylight is crucial. I would much rather soak up the sun, go for a swim, or take an adventure to somewhere new than curl up in bed surrounded by blankets and tissues.

To celebrate Mother’s Day a few weeks ago, I originally planned to treat my mom and both of my grandmothers to a delicious brunch/late lunch/early dinner. Nonna had just arrived two days prior to spend the summer and early fall with us, and I was supposed to pick up Gram from the airport after another one of her Italian adventures. Since we would all be together, I wanted to celebrate these wonderful women, and my beautiful mother, with something other than material gifts.

I am a fan of coconut. However, I mostly stayed away from it during college once my roommate found out she had a tree nut allergy. Tree nuts include almost all nuts, except peanuts and black walnuts. While the variations and severity of the allergy vary from person to person, my roommate’s allergy included coconut, so we avoided it whenever possible. Now that our four years of living together are over (for now, at least), I’ve been soaking up the coconut. Literally. Read More
